Gajar/Carrot Halwa

I wanted to eat some sweet today evening which is homemade and simple. So decided to make Gajar halwa. This is very easy recipe to make and mouth watering. Just used the pressure cooker for making this delicious desert.


Ingredients:

Carrot - 500 gram. (Do use the hard carrot) around 6 to 7 will be there.
Milk - 2 cup
Sugar - 2 cup
Ghee - 5 tsp
Cashew nuts - ¼ cup
Raisin - 2 tsp

Steps:

Grate the carrot with the thin holes of shredder. So that, it will be very smooth and nice.
Take the grated carrot and milk into a pressure cooker. Cook till 3 to 4 whistle. Switch off the flame and cool down. Do not release pressure manually and let it take time for cool down that itself.


After cool down open the lid and switch on the flame. Add sugar into the cooked carrot and stir it. Sugar will melt. Excess milk and sugar jelly will bind with carrot now. Keep stir it frequently in order to avoid stick in the bottom. After 20 minutes, it will bind almost.
Heat ghee in a separate big spoon and roast cashew and rasin till the golden color. Add all together(including ghee) into halwa.

Stir it till halwa bind well.
Serve hot or cool down and serve. Generally, halwa will be good after cooling down.
