Spiced Lamb Riblets

Riblets also known as keel bone, Nenjelumbu in tamil are often cooked in many places. But
usually this is used for making curry or semi gravies. For a different, I am going to make
oven fry today. Riblets are relatively fatty. When slow-cooked in oven they become
incredibly soft, tender. The fatty flavor will add extra tempting after cooked. The rib bone
become handy after cooked properly. You can hold this bone and eat like tandoori. Let’s 'make now.

Ingredients:
Lamb Riblets - 1 lb
Red chilli powder - 1-1/2 tsp
Coriander powder - 2 tsp
Cumin powder - 1 tsp
Garam masala - 1/2 tsp
Pepper powder - ½ tsp
Lemon juice - 3 tsp or juice from ½ lemon
Ginger garlic paste - 1 tsp
Roasted sesame oil/normal sesame oil - 1 tsp
Peanut oil - 1 tsp
Salt as required
Steps
Wash 1 lb of lamb riblets thoroughly. If you find membrane on the riblets, just peel it off.
Then wash completely 3 to 4 times.
Gently remove excess moisture from the lamb riblets using paper towel.
Now in a bowl, add 1 and ½ tsp red chilli powder, 2 tsp coriander powder, ½ tsp garam
masala, ½ tsp black pepper powder, required salt, 3 tsp lemon juice or juice from ½ lemon,
1 tsp ginger garlic paste and mix it all together to bind everything.
Now add 1 tsp roasted sesame oil. If you not have this roasted, you can add normal sesame
oil. Roasted sesame oil will give some strong flavor.
Now mix it once again.
Then add 1 tsp regular vegetable oil or peanut oil and mix it. Now you will get thick paste for
marination.
Place riblets in a baking tray and apply the masala which we made on all riblets. Apply both
sides and all parts.
Cover this with aluminum foil or plastic cover and marinate this for at least 6 hours.
After 6 hours marination, preheat oven for at 350 degree and put the riblets baking tray
inside oven with aluminum foil covered.
Let it cook for 15 to 20 minutes.
After 20 minutes, you will see the fat melted from the riblets. You can just ignore this fat.
Transfer Lamb riblets into a plate.
